Preparing Corned Beef Hash

Beginning thing you lot'll want to do is get started with the spuds. We'll be boiling and so pan frying them so they're ULTRA crispy (no false promises). A lot of corned beef hash recipes upshot in a softer potato, but I much prefer the contrast betwixt the crispy potatoes and soft corned beef. Whilst boiling potatoes is indeed fairly straight forward, here'south a few tips that will specifically help y'all with this recipe:

  • Common cold H2o – Start the potatoes off in cold water, so as the water heats to a boil they'll cook more evenly through the centre.
  • Salt – Potatoes suck up salt like a black hole, then season the water well.
  • Steam Dry – Once they're pocketknife tender, bleed and leave them to steam dry. The more than they steam, to more than wet escapes, the easier they are to get crispy and the fluffier they'll be in the centre.
  • Shake it up! – When they're in the colander requite it a good shake. This will crude the edges of the potatoes and ensure they go extra crispy.

What potatoes to use?

A nice floury potato, something like a Maris Piper or Russet works nicely. I find it more difficult to rough the edges of waxy potatoes and I detect they don't come up out as fluffy in the center, so a blistering potato variety is more preferable.

Process shots: add potatoes to pot (photo 1), add together common cold h2o and salt and bring to boil until knife tender (photograph 2), drain, steam dry and shake colander (photo 3).

The best style to brand corned beefiness hash is in a frying pan, with a skilful corporeality of oil. You'll essentially want to shallow fry the spuds. Once they're crispy, yous can discard the oil and continue making the corned beef hash. You only need enough oil to fill the base of the pan, so it'south not a huge amount.

What kind of corned beef to use?

For me it'due south always gotta be the canned stuff, and I have no shame in saying that 😂 It'south definitely more traditional, at to the lowest degree here in the UK anyway.

What can I add together to corned beef hash?

Along with the potato and corned beef, here's what you'll demand:

  • Worcestershire sauce – This deepens the flavour and soaks into the corned beef to inject a little moisture.
  • Onion – Goes perfectly with both the potatoes and corned beef. Bulks out the hash and adds a impact of flavour.
  • White Pepper – This adds a gentle kicking of heat.

Besides that y'all really don't need anything else. Corned beef hash is more near technique and bringing out the best in the few ingredients you lot're using.

If you want to continue the potatoes extra crispy then remove from pan, fry the onions stir in the corned beef and Worcestershire sauce, then stir through potatoes at the end just before serving.

b) Common salt - I tend not to season with salt at the finish equally corned beef is fairy salty. Plus the potatoes are quite well seasoned later on boiling in salted h2o. Notwithstanding, work to taste and add together more salt if you want to!

c) Leftovers/Reheating - Allow to completely cool and so tightly cover in the fridge for 3-5days. Reheat in a pan over medium heat directly from the fridge until the potatoes crisp up again and the corned beef is hot all the style through.

d) Calories - assuming ane/4cup oil is soaked up, 1/2 tsp salt is soaked up and served with no egg or sauce.
